Dan Hunter Great Barrier Feast

It’s not long until Dan Hunter makes his appearance at the Hamilton Island Great Barrier Feast Food and Wine Series at qualia. I was intrigued by Hunter’s food even before he took out the Good Food awards for Best Chef (2012) and Best Restaurant (2011) – you have to have a moment to spare for any chef with access to a kitchen garden with 150 varieties of edibles, like that at Dunkeld.

I hope that the Jerusalem artichoke, triple cream & Australian winter truffle makes it on to the Feast menu, though his beetroot and mandarin, cocoa and walnut has me quite intrigued. I look forward to seeing how he will bring his take to the excellent produce found in our corner of Queensland.

Then there are the Electrolux Master Classes held in the long pavilion at qualia with that amazing view of the Whitsunday Islands, and a trip to Spa qualia is a must.

A few years back Australian Gourmet Traveller wrote that “the fascinating thing about Hunter’s food is that it’s not wacky, just clever, lateral and true to the fundamentals of flavour, texture and respect for produce.”

Sounds… intriguing.
